Oh my goodness, it feels like forever since my last post! I can’t believe it’s been a month since I wrote on th blog but my last couple of weeks were crazy! I just finished my semester and between finals, projects and online clients my days were absolutely busy.
I’m so glad I’m back and ready to embrace the summer and share so many goodies with you! There are so many amazing things coming to the blog soon and I can’t wait for you to try them!
Today’s recipe is a super simple meal that I’ve been enjoying lately, it’s a great way to enjoy mexican food in a healthy way and very easy to make. I shared this on my “what I eat on a day” video in Youtube where you can also see other meals I’ve been enjoying.
Gastrawnomica’s VEGAN Black Bean Mexican Tacos!
Serves 2
4 corn tortillas, preferably organic
1 1/2 cups cooked black beans
Cherry tomatoes or pico de gallo
1/2 avocado or tahini
Fresh, chopped cilantro
1 tbsp nutritional yeast
Put the beans on a small bowl and lightly mash leaving a few whole beans, add sea salt to taste, nutritional yeast and mix.
Prepare tortillas by heating a skillet and cook on medium heat until soft. Serve 2 tortillas on a plate and fill with beans, tomatoes, avocado or tahini and top with fresh cilantro or any other vegetables of choice.
Super simple and SO delicious!
