Happy Friday friends!

I wish you all had a wonderful Thanksgiving if you live in the US. We celebrated last month here in Canada, definitely one of my favorite holidays after Christmas.

As I’m sure many of you will be spending this weekend with your families and friends, I decided to share this quick and easy recipe that you can make anywhere at anytime!

I’ve been eating it for the last couple of days and I can’t seem to have enough of it! It turned out so, so amazing I just want to eat it in all possible presentations!

It is not only really easy to make, but the best part is that it is an incredible source of plant-based protein, edamame beans are the whole, unprocessed soy beans you usually find in most supermarkets in the frozen food area. I recommend you to buy organic since most soy beans are GMO.

It is a super flavorful, colorful and nutritious recipe you should definitely try!

Gastrawnomica’s Oil Free, Low Fat Edamame HUMMUS!

Yields 2 1/2 cups hummus

2 1/2 cups frozen edamame beans, defrosted

1/3 cup Sukrin fat reduced, cold pressed raw sesame flour* (can substitute with tahini)

1/3 cup room temperature water

1 garlic clove

1 small handful cilantro

1 Tbsp apple cider vinegar

Sea salt and pepper to taste

Start by mixing your sesame flour (if using) with 1/4 cup warm water until smooth and creamy, skip this step and substitute mixture with tahini.

Put all the hummus ingredients in your high speed blender except for water. Blend for a few seconds and add water slowly. I used around 1/3-1/2 cup of water, so add it as needed until super smooth and creamy.

Season hummus to taste and serve!

I’ve been enjoying it with veggie sticks, nori rolls, lettuce tacos.. Variations are endless!! Such a great, easy recipe to try, and I’m sure everyone at home will enjoy it too! Super flavorful!
