Happy Monday friends!
So excited to be back on the blog, I’m finally done with school and so ready to get back on my weekly posts and YouTube videos. Today I started the day with an amazing run around the beach and a short Pilates home workout. It feels so good to be outside enjoying the nice weather!
After my workout of course I was so ready to eat! I’ve been doing a more high protein diet lately (plant-based) and I was craving something different from my usual so I decided to go for waffles!
It’s been ages since I had them, so I made this incredible, super easy and healthy version using one of my favorite protein powders from Botanica Health, a Canadian company that has amazing products!
VEGAN, GLUTEN FREE PROTEIN WAFFLES
Makes 5 waffles
INGREDIENTS:
3/4 cup gluten-free flour (I use Bob’s Red Mill)
1/4 cup coconut flour
1 cup almond milk
1/4 cup Botanica Health vanilla protein
1 Tbsp baking powder
Stevia drops to taste or stevia powder
Fresh fruit, nut butter, coconut yogurt (or maple/coconut/agave syrup), granola chunks
INSTRUCTIONS:
1. Mix the dry ingredients together in a bowl.
2. Add Stevia, then slowly add the almond milk, mixing until well incorporated. It should look a bit lumpy and thick.
3. Cook in a hot non-stick waffle pan. Flip and cook on both sides (add a little bit of coconut oil if needed).
4. Serve with your favorite sweetener like maple or coconut syrup, raw honey or like I did, with a lower sugar version, using unsweetened coconut yogurt, fresh fruit, almond butter and a few granola chunks.

Remember that part of enjoying food is not just eating it, but the entire process from the moment we see a recipe and go buy our ingredients to the moment we cook it and sit down to eat it.
