Grilled Tempeh with Tahini-Cashew Mustard Dressing

Hey everyone!

Can’t believe the weekend is almost here! Sometimes I don’t even know how days go by so fast and now the year is almost over!

I’m so excited to be back home for the holidays in just a few more days! Talking about being back home, I sent a couple of organic tempeh packs for my mom to try last month and she loved them! I’ve been obsessed with it lately, it’s just amazing how versatile they are but so flavorful that you can eat it with or without other things.

I honestly love eating it with just a simple bowl of vegetables and tahini dressing or this amazing Tahini-Cashew Mustard Dressing that you guys seriously most try!

Gastrawnomica’s Grilled Tempeh with Tahini-Cashew Mustard Dressing

Yields 1 cup dressing

1 packet organic tempeh, grilled or baked

Dressing:

1/2 cup soaked raw cashews

1/4 cup tahini, smooth

1 big Tbsp yellow mustard, preferably organic

1 small garlic, minced

1/2 large lime or lemon, juice

Sea salt and pepper to taste

Water as needed

For serving:

Chopped cilantro

Veggies and greens of choice

Blend all sauce ingredients until smooth, adding a little bit of water as needed. I used around 1/3 cup, but it will depend on how creamy or liquid you want it to be.

Serve a bed of greens, veggies of choice and tempeh, topped with the dressing and chopped cilantro. This is just one way of using it, you can use as a dressing for other salads, dipping sauce for sweet potato fries or however you feel like using it!
